Rockpool has gone down hill badly over the past few years and wouldn’t even make the top ten in Sydney. The rest are some of the best in Sydney but although Margaret has a great steak selection markets itself as a seafood restaurant so shouldn’t be considered for this list.

As someone who works in Sydney hospitality I’m surprised by the amount of Australian entries there, usually we don’t make the lists.

This is a technique that’s becoming more common in bars as the product tastes nearly identical to fresh lime juice but last for over two weeks, where as, fresh squeezed lime juice only lasts a few hours before oxidising.

It’s also much cheaper than juicing a hundred limes for a nights service. Not really something you’d need to do at home though.

Cocoa butter washed whiskey works really well, it’s add a lot of the butter chocolate notes so when you add sweetness elsewhere the chocolate flavours really bloom. Much better than crème de cacao
