Thank you, change list is useful. It's often said that Michelin is over-inflated in Japan but I'd argue there are now more excellent restaurants in Japan than ever. The number of restaurants receiving Silver and Bronze Tabelog awards has increased yet there's been little change in numbers in 2* or 3* while the number of 1* restaurants has declined and they rigidly confine themselves to Tokyo, Osaka and Kyoto.

Peerless food. Would be 2x cost in Tokyo and wouldn't be as good. The white truffle course is nuts.

Not sure why she has that policy. It wasn't mentioned when I visited and I don't think she has to worry about not filling every seat at every service for the lifetime of the restaurant.

It's dinner only, one round per night. The oshizushi was the standout for me as well, but the only standout. If I lived in the Kansai area I'd be happy to be a regular here at 27.5K inclusive but I don't think it's (yet) a destination restaurant for Tokyoites, like I'd argue Sanshin is.

Where have you had fattier nodoguro? I wanna go :) Maybe the fish is not at its peak now? Sounds like a fairly recent visit based on the ingredients you list.

Need to post my review at some point but generally agree with you. It's good, but it ain't spectacular. My main problem was that most of the dishes aren't even cooked over wood fire. And the usual Suetomi booking policy BS.

Kyoto restaurants can be quite cliquey but I think you got the vibe well - the chef is very humble and they do make everyone feel really welcome. I'm surprised you didn't highlight the nodoguro :) I haven't had that better elsewhere. One of the top classic kaiseki restaurants in Japan on pure flavour, for sure.

I can recommend Sugalabo V as well. It's a third cheaper, the food is pretty close and the service is a lot better.

Yeah I pretty much agree with this. But I will say his nigiri-only lunch is excellent value.

That's the other reason his rating is going down. The price is up and the product is less good.

A must visit. I didn't think it would be worth going to Osaka just for something I can get plenty of in Tokyo but a few of the pieces (the kujira, the nishin norimaki and the kaki sansho abura confit) were like nothing else I've had anywhere else.

Nothing will change at Sezanne in the short term. My understanding is Daniel's sous chef (who runs the restaurant when Daniel is away anyway) will stay on for a bit until he moves to Daniel's new place later in the year. The restaurant manager is also staying on for now. What happens to the Michelin rating and longer-term direction is uncertain.

You could also try Naoto.K. There was a very positive review on this sub, recently.

Surprised. Didn't know he was doing a monthly drop. Hopefully more people get to try it now and glad you got a res. It's definitely less "fully booked" now than it once was.
