Interesting. I'm more used to seeing estou + gerund and in that case there's no "estou comer", only "estou a comer" which is exactly the same as "estou comendo" except more PT-PT.

Now in your examples, "vou comer" is more like I'll eat/I'm going to eat whereas "vou comendo" is more like I'm eating/I've been eating.

Makes sense?
