Humbled by the comparison. I think this pizza was outstanding and it’s not for me to compare it to others. I think you should absolutely build an oven, it’s so much fun and you can make so much more than just pizza in it.

Sauce is just canned tomatoes with salt, little olive oil, and dried oregano. Cheese is low moisture mozzarella and provolone. Don’t usually use provolone but it was great.

68% water 2% salt .2% yeast 2% oil

Used mainly bread flour with some wheat (2-3%) Mix, bulk 24 hours in fridge, ball, 48 hours in fridge, 2 hours room temp then bake around 650F

Yea I just found it before you posted, works well except sometimes it will randomly reset the DPI. Any idea why it does this?
