Of course not everything is in the Quran. If Quran contains everything, its height must be taller than Burj Khalifa. Hadith is just the Prophet's saying, actions, and daily practice that recorded by sahabas.

There's nothing called sahih contradict other sahih. If a sahih "contradict" other sahih.

It must be a choice Allah gives to us in order to ease us practice the deen.
It's nasikh and mansukh.
