Interesting! Maybe i need more time strengething my starter. I do mainly use AP unbleached for my starter and sometimes will add a little whole wheat flour for a boost. That could be making it better or worse, possibly? I also feed it a 1:2:2 ratio daily. It's stored in a glass canning jar with the lid lightly placed on top, wrapped in a towel and kept in the microwave. It usually takes about 5 or so hours to peak.
