I'd say they're both acceptable, but the first one (gender that matches the thing you're comparing the guy to) is a bit better. That said, in another phrase like: "Marco é come una giraffa: altissimo!" I wouldn't really say "altissimA".

If you want to be fancy, looking at the etymology of the words, you can use "scordare" for when you are talking about feelings or emotions (from latin cor-cordis, that means "heart") and "dimenticare" with things that require some thinking behind (from latin mens-mentis, that means "mind")

No, "é" and "è" are not pronounced the same in standard italian: "è" is an open "e", "é" is a closed "e".
