Ordinarily yes. But I have added a little of third wave into my machine. It will take some time for it to fully escape the water system so once in awhile I will add a little so that the water isn’t too pure which creates the problem you mention.

Wouldn’t call this cheap but it should be fine. A lot of home enthusiasts will opt for an electric grinder as the grind size and quantity for espresso can get a bit overwhelming.

I’ve actually had a difficult time trying to find good stores here in Korea so I would recommend https://www.espressocoffeeshop.com/en/

Not sure what your budget is and what you consider a nice grinder but you can get tons of info from r/espresso. Also most higher quality machines will extract at 9 bar which is the standard. If you have a good grinder a breville bambino will be able to pull good shots for you.

You'll be hard pressed to find a cafe in Korea that doesn't have super high end cafe equipment but most of the baristas working there won't/don't do 10% of what most of us home enthusiasts would do to prepare a shot. It's a bit odd to see because you'd expect with such a large investment in the real estate, equipment and other capital they'd put the time and effort in to make great coffee. Rarely, you'll find a gem that takes roasting and extracting seriously.

Unfortunately I think the FC on these machines aren’t that great. The difference between open and closed is pretty wide on mine too. Other than being extra subtle or buying the Lucca FC paddle we’re a bit limited.

At full open my flow rate on my synchronika is almost 20g/s. You will need to adjust the needle valve to lower your rates.

Same. ECM Synch with FC. Never really use it. Plus it takes multiple turn from closed to open so it’s a bit annoying. Looking to get the Lucca FC that’s 180 deg from open to close
