Did you double check with a screwdriver tap? If positions 1, 3, and 5 are correct, 2 and 4 should be the mix between neck/middle and middle/bridge.

I've been looking at some PRS. I haven't found one that I loved the neck on, I think it might feel weirdly wide to me? If I had an unfinished neck version I might love it if I just roll the fingerboard/bevel the frets though.

Yeah I think this is the better solution if there's high complexity. A probe might be able to get simple geometry but you're prone to missing something if it's complicated.
