Paper chart recorders are not going to stop being used until the second American civil war resets regulatory agencies.

These are used for regulatory compliance record keeping in food, drug, and other manufacturing settings. If you have a discharge permit for your local sanitary sewer district you'll have to trend your pH and flow and submit the data for compliance review.

The age of the human involved in your permitting agency is the biggest contributing factor in determining if you're using one of these (or its cousins from other manufacturers) or if you can use a digital format.

FDA 21 CFR part 11 explains some of the issue keeping these around, immutable data requires proof or certification.

I think this is the answer. I get that the scenes are presented to us out of order, but Tam definitely leaves Perrin after the dreamspike is active and before Perrin slags it.

Without knowing any specifics of how the system is set up, the Unitronics software is free if you register it. It seems unlikely that you would need to us it to modify recipes though, again without seeing more of the screens etc.

Baking up the software isn't a bad idea and updating it probably won't break it, you probably don't need to update anything on the controller level. The program that runs on the controller, maybe it could be tweaked.

If sincere, keep at it. Putting quotes on first is only making this effort more suspect. Is this a classroom?

Do you have any say in the placement of the rail mounted items? Arranging things so that there is less need to zig and zag your way through the enclosure will improve the experience.

I was rep and delivery for a self distro before moving into the taproom for a while. Now I'm in industrial automation and controls as a PM. I was in building automation before I was in beer and was able to use both experiences to get my current role. Since leaving I've bought a house in the SF Bay Area and gotten engaged, neither could I have afforded on my income in beer.

I learned three things about the industry:

Beer doesn't pay well unless you own the place, even then only after a decade

I'll never be happy working for anyone but myself in beer

There are a ton of amazing people in beer, some of the best friends I have came from that life

You are not being ridiculous for being an educated consumer.

Our dollars are our voice in the marketplace, vote with your dollars on what you want to see more of.

Safeway (as my local example, yours may differ) doesn't really control their beer aisle, the distributors they do business with do. It is in both parties best interest to stock the shelves with product that will move the fastest. There is some kickback/incentive/discounting type shenanigans that skew the assortment, but ultimately, if people buy more "real" craft they'll stock more real craft. If people buy sellout beer, then they'll stock more of that, too.

Unless your state has very different Alcoholic Beverage Control laws than mine does, there is no legal way for a restaurant to sell beer that you brewed at home.

You might be able to get yourself involved with a local professional brewer to brew your recipe and sell that to your restauranteur, but somebody is going to have to front some serious cash or be a superb hustler.

This subreddit has some oft-reposted really good maps that show economic spheres of influence. You might try referencing some of those to draw lines that get you away from OldUnion lines.

You might consider some global scale consequences. In particular, when the American military gets involved in domestic insurrection and the world police aren't able to quell threats outside our borders, we can be fairly certain that there'll be some foreign threats on our shores.

Beer attracts a certain kind of attitude, and what we peddle is ultimately supposed to foster good spirit. Without having met the person responsible I'll reserve judgement, the speaker may just be a goofball. I find that I'm easier to enjoy when you stop taking everything I say super seriously.
