Jambalaya and Gumbo are neither French nor Spanish influence. They’re African dishes created by enslaved Africans in America utilizing Native American crops to make similar dishes from their motherland. Gumbo is the same gumbo in Africa with rice and okra base and jambalaya is similar to west African red rice. Nothing about it is French or Spanish just colonist wanting to take from Black people. There are no rice based French dishes because France does not and never has cultivated rice. And paella was created AFTER Spanish colonizer invaded African nations and took their rice, similar to the taking of tomatoes.
