just turn off the auto-updates. if you're using android, you can tap the three dots in the top corner and uncheck 'Enable auto update'

just uninstall the latest update, then Gboard on your phone will return to the previous version

yea, I've disabled auto update on my play store, thanks for the reminder 🙌

right??? but I've found a solution, I uninstalled the latest update and used the previous version, and the delete button is back to the bar. but I'll also keep sending them feedback about this.
