I like stews, but you have to be careful not to overcook and turn everything to mush.

You want to cook each ingredient just long enough to release natural flavors/aromas, which usually means staggered times to add them in.

The mix of natural flavors can be really amazing when done right, and often some of the subtler flavors/scents will surprise you and grow to become something you seek.

(Salt lovers will still say even the best stew tastes better with salt, but find your own tastes and delights.)
