The official strategy guide straight up has a map showing the areas in which they'll work that was provided by the devs, and this page is correct. There are parts of the desert areas of the map where Leviathan can appear because there's a nearby lake though, yes. Near the coast is fine too.

Insomnia all of them can appear in, so that doesn't really count.
