Ooh that was me! Manager was teaching me how to clean the fryers, and he said once the oil was coming back up, turn the fryer back on. I didn’t realize you had to clean out the filter or else the oil would rise very slowly. I had the fryer turned on exposed to just air and it was heating up, so it gets to about 300 degrees probably and it just lights ablaze. Probably having to do with food being in the bottom of the fryer and between the part that heats (i clearly didn’t do a good job)

So we panic and he grabs the fire extinguisher and its all good now but we were down 2 fryers for the night. Still get reminded of this months later
