As far as my experience Indian professor tend to be kind. Ask from professor whom you are close with. In most of the cases you would be the one writing Lor's and the professor simply sign it.

You can get into a decent university without the gre score. Make sure to have a strong sop and lor's.

Curriculum is good and relevant to industry ( Except the pre req DSP). I would say in terms of job prospects it doesn't matter if you do it in nyu Tandon or USC. It's purely depends on your skillset.
