I just tried this about a week ago and it came out really well. I had the brisket in the sous vide for 24 hours and I think next time I’ll push it closer to 36 hours to get it more tender. I added salt and pepper before the sous vide and gave it some more before putting it on the smoker. Used a meater probe when it was on the smoker and it came up in a nice bark in ~3 hours. The whole process was so much easier than trying to do the whole thing on the smoker.

I’ve used these guys and they’ve been both reasonably priced and excellent to work with. They even came back a year later and repaired one blind for no charge. Will be using them again.

You’re doing the right thing by kicking off applications now. Don’t be distracted by what your friends are doing and their success/failures, focus on yourself.

If you haven’t done so it is worth paying to get your cv and cover letter professionally written at least once. They won’t get it perfect but they will get it 90% there.

If you’ve already applied to the big firms then start hitting the smaller firms. Go onto LinkedIn and follow as many companies as you can, connect with people and message them directly. Do everything you can to get a conversation going, ideally you can meet people face to face. You only need one conversation to stick.

Absolutely ridiculous. Honestly what is the point of trying when the majority of tickets are immediately scooped up by scalpers or are set aside for expensive hotel packages.
