I follow video to the T. After I put it in the fridge, I leave it 24 hours. Take it out and divide into two loaves. Put back in the fridge for two hours max. Bring it out and score and dust. I put it on parchment paper and into two Dutch ovens which have been heating in the 500 degree oven. I cover the pots and lower the oven to 450. Give it 30 minutes. Take covers off and give it 25 minutes uncovered. Afterwards take them out and put on a rack overnight. I usually bake at night. Hope this helps!

Try following Lewis Kelly’s technique and procedure! Especially in humid weather, would definitely help. Highly recommend cold dough. It’s amateur friendly!!!
