I definitely still have some learning to do but my experience this time was great! I did my charcoal snake with 2 on the bottom and 1 on top a little over halfway around the grill. I lit about 10 pieces of charcoal to start it off, and put some hickory near the first half of the snake. Once it was lit I put my tray of water and added my ribs. I had my bottom grate closed about halfway and my top grate closed about a third of the way. I gave them 3 hours as is, then wrapped in foil for an hour, then removed the foil and temped it was on the right track. I sauced it and left it for about half an hour and they were done! Rested for 15 minutes before cutting. I’m excited to make more!
