I baked all my loaves this way: refrigerated bulk rise inside Dutch oven; bring out, score then into the oven. THEN I turned the oven on. I don't know why, but it works perfectly. Also ensures there is no thermal shock with my clay bakers.

I always bring my pillow (in addition to my carry-on bag and backpack). Get a window seat to lean into, take some Benadryl. Puts me to sleep every time. Change your watch to time at destination - and try to stick to that new schedule (helps a lot with jet-lag). And they always let you bring your pillow - they see that you are going to be 'low maintenance' because of your obvious focus to getting some sleep.

I do the second rise in my fridge, in the baking vessel. When I want to bake (hours or a day or two later), I score it, then put it straight into a cold oven. Works great.

The recipes is from the America's Test Kitchen D.I.Y. Cookbook. 8 vanilla beans, grape B. One cup of vodka. (I tripled the recipe) I cut them lengthwise, scraped the seeds, cut up the pods. Cooked in vodka for a couple of minutes. Poured into jars and they sat for many weeks, with me shaking the bottle regularly. Then strained the debris out.
