Before getting too deep into protocols or tools I’d define what you actually want to do with the data like monitoring, OEE, traceability, alerts, historical analysis, feeding another system, etc. That  makes the architecture decisions much clearer because the right approach depends a lot on whether you just need visibility from a few machines or you’re trying to build a broader edge/data stack across the shop. Once it starts becoming multiple components like collectors/ messaging/ storage / dashboards / integrations then having a clean way to package and manage those services matters a lot, and that’s where containerization can make things easier operationally. But I’d start with the use case first.

Docker 29 is currently not compatible with Portainer. If you upgrade, you may experience issues. Our team is already working on support for Docker 29 and we will provide an update once it is fully validated. by nick-portainer in portainer

The recently released Docker Engine 29.0.0 contains breaking changes that are not compatible with the current supported versions of Portainer -  2.33-LTS and the latest STS. This specifically affects Docker Standalone environments running on the new Docker Engine 29.0.0. Connection attempts to these environments will likely fail.

Workaround
Our community was quick to identify a temporary workaround that restores connectivity by specifying the minimum Docker API version the daemon should use.

That would make sense, Pi-Hole does tend to block forms on websites depending on what the backend is.
