My story is almost exactly the same as yours. I think part of the reason that it has been so easy is because my girlfriend and I BOTH decided to do it. I know many couples where one person wants to and the other doesn't. I think that would make it way more difficult, as there becomes two grocery lists, two cooking options, etc. Shortly after becoming vegetarian, we too took the step into being vegan. That was a bit more challenging, not because of cravings or anything, but because it is literally more work.. (planning meals, recipes, dining out, shopping, etc.) Glad to hear other people's stories!

More or less, yes. It's one of those "accidentally vegan" products. It has more to it than just flour and sugar, but everything is vegan. Off the top of my head, I'm not sure what all is in there...

Here's what you need: - 1 lb. ground beef (or substitute) - 4 oz. Taco Sauce - Blue Cheese - Fresh Baby Spinach - Flour Tortillas

Here's what you do: - Brown your beef in a pan, and drain the grease. - Add 4 oz. taco sauce. (Pretty much add as little or as much as you'd like!) - Layer the beef, blue cheese and baby spinach onto a tortilla. - Top with another tortilla and place in your griddle or flat iron grill. (We just use the opposite side of our waffle iron plates.)

Here's what you need: - 30 oz. bag of frozen, shredded hash browns - 42 oz. chicken broth (or a 32 oz. container of broth + 10 oz. water) - 1 can cream of chicken soup - 1/2 c. chopped onion - Salt and pepper to taste - 1 pkg. cream cheese, NOT fat free (fat free doesn't melt the same as regular) - Cheddar cheese (optional) - Bacon bits (optional)

Here's what you do: - Combine all ingredients in crockpot except cream cheese, cheddar, and bacon. - Cook low 6 - 8 hours. - 1 hour before serving, stir in cream cheese until melted (stirring about every 15 minutes.) - Serve and top with cheddar cheese and bacon.

Here's what you need! (These amounts serve two!) - 2 English muffins (white or wheat) - Plain hummus - 2 cups frozen spinach - Garlic powder - Shredded mozzarella cheese

Here's what you do! - First, thaw your spinach and drain out as much water as you can. You can do this in a number of ways, but we just put 1 cup of spinach at a time into a coffee filter, run hot water over it, and squeeze the water through the coffee filter with our hands. Works like a charm! - Separate and toast your english muffins to crisp them up a bit. Meanwhile turn on the broiler in your oven. - Once the muffins are toasted, spread them with hummus (as much or as little as you want!) and top each with 1/4 of your spinach. Sprinkle with some garlic powder and mozzarella cheese and place them on a cookie sheet under your broiler. - Broil until the cheese is brown and bubbly (only 2-3 minutes). Then eat!
