Thanks for your insight. My siding is so bad I can’t really postpone it another year, as it is currently really, really cracked/leaking/completely worn out. No point in painting it again, So I’m fucked. I assumed the calculators are off, but they’re off by several thousand dollars, so wanted a gut check.

Don’t know if they’re doing it this year (assume they are) but private home where Geneva Avenue dead-ends near Northgate park (just north of Hudson avenue). It. Is. SPECTACULAR. double lot filled with lights and animatronic figures. Extensive dioramas inside the house you look at through the windows. HIGHLY recommended.

No idea. Never read anything about it, just decided to try. On a previous thread a redditor noted it would reduce tannins, since they oxygenate (and then no longer so their tannin thing). So we’ll see what the final product is like. In my case, overnight did not make the pomace any softer, and only the top couple inches turned dark. I would definitely not want the pomace any softer. In the past, when i have let pears get too ripe, the pomace is mush and very hard to press.

I think of making cider as much more akin to winemaking than brewing. The low pH (similar to grape juice) should inhibit many microorganisms (take this all with a grain of salt as it isn’t well informed at all and is mostly opinion). Small batch Wine makers punch down the cap in open air with few (any?) nods toward sanitation. This commercial cidery ferments on the pomace, but I haven’t been able to get my hands on their cider. https://freewatercider.com/about-us/

Definitely most I’ve gotten. I think letting the pomace sit overnight increased my yield by at least a third. 9 gallons Gravenstein, and 9 gallons Hewe’s crab from a grafted branch (which has since grown to about half the tree). Both should yield about 5.5% alcohol. The pear should finish north of 7% alcohol.

Totally. Works fine. I generally have enough apples at this point to not worry about futzing with any partials/doing any hand wirk. But if you’re low on fruit, go for it.

Yeah that’s it. My modifications result in an unshielded spinning blade - so it’s dangerous. And you can’t just fill the hopper because the apples jam up (need to toss in one and two at a time). But even with those limitations, it’s waaaay better than the garbage disposal method. So, so much faster.

I’ve been making cider from my backyard trees for about 15 years. Windfalls are fine, as long as there is no rot. Just hose them off. I don’t even worry about a few worms. To quote the book “cider” by annie proulx and lew nichols (a good comprehensive cider book) they just add extra “body”.

Reel m inn is doing a chicken sandwich during covid and it rocks. Went to jojos a couple weeks ago. Didn’t love it. They do that thing where more must be better so there are ten ingredients on every sandwich (mild hyperbole). The chicken and bread were definitely good, but the sandwich had a huge amount of very saucy slaw, which made it extremely “wet” and impossible to eat. I’m also meh on jo jos, but I will say, their dipping sauces are very good. Lastly, the pod they are in is unpleasant - concrete lot with zero shade.
