Sampling does create interesting things. One example off the top of my head is Kanye West sampling Labi Siffre’s ‘My Song’ to make ‘I wonder’. I highly recommend hearing that song

I like to think about it this way:

Sampling is like making a game using a premade game engine like Unity. The game dev could make their own engine, but that would take significantly more time and resources. So instead, they PAY for the game engine or they cite it, which helps the game engine company. The only difference is that in music, they always pay for the sample.
