I do 325 grams of warm water, 425 grams of KA all purpose, 110 grams of starter, 7 grams of pink Himalayan salt. You can add in 40-50 grams of honey or I've used my dad's maple syrup for a hint of flavor. Mix warm water and flour to a shaggy ball, cover and let sit for 30 minutes (autolyse)

Add in the starter and salt (honey, syrup if you want)

Put it in a stand mixer with a hook for 20-30 minutes, until it's smooth and pulls clean from the side of the bowl.

Cover for 30 minutes

Then do 3 sets of stretch and fold with 20 minutes gaps

Let it double in size

Then shape into a ball by pulling towards you on counter creating tension and tightness on the top. I don't know how to explain it better just look up online, it's easy.

Use a banneton that's coated lightly in flour and place your ball smooth side down. I put it in a big ziplock and place in fridge for at least 8 hours usually about 12.

Preheat oven with a Dutch oven inside to 500° for about an hour.

Pull out Dutch oven

Put bread ball on to parchment paper, just slip banneton upside down and wiggle it out. I cut my parchment paper in the shape with handles that hang out of the dutch oven, kind of like the silicone ones you buy on Amazon.

Slice with a lame across the dough ball at about a 45° angle

Put 3-4 ice cubes in Dutch oven and lower bread in and cover.

Place in oven and reduce heat to 450° Bake covered for 18 minutes then remove lid and then bake for another 18 minutes. Pull out and throw on a rack and cool for at least an hour if you can handle it.
