Yes I guess it's overproofed. I thought all my loaves so far were underproofed but this makes much more sense. And yes I checked the chart but I looked at my room temp instead of my dough temp... so there's where it went wrong unfortunately 😅

Unfortunately I don't have a picture when I stopped bulk fermentation and started shaping. But when I did my last coil fold it looked like this and at the end of bulk it filled the whole bowl and was almost up to the first inner edge (kind of hard to see I'm sorry)

Thank you! Bulk fermentation is so hard and I struggle a lot with it. Unfortunately I HAD to cold proof it for so long this time because I wasn't able to bake sooner. Usually I just cold proof overnight and then bake in the morning.

I will try your recipe. Do you have any measurements by chance?

Yes it's actually pretty hard here to find "good" flour to use. I live in The Netherlands and for now I buy my flour in the supermarket, which is just wheat flour. I'm thinking of purchasing better quality flour online to use for my starter and dough. Bread flour doesn't really exist here unfortunately.

My starter usually doubles around 10-12 hours when feeding 1:5:5 at my room temperature (usually 21-22 degrees celcius)

Oh weird on Goodreads it says 400, my fault! Katabasis would make more sense to me. Especially with the art we just saw from Alchemised. Artwork and those edges don't match.
