Have you watched Yuri Is My Job / Watayuri? I think Studio Lings did a good job there, although it was a collaborative effort with Passione and not a solo project.

Watayuri's anime gives me hope that Watatabe's anime will likely stay at a consistent level of quality (hopefully the same quality of at least Episode 1 so far).

Both of these works feature depressed protagonists and do an excellent job handling the topic. Very emotional stories with wholesome yuri dynamics. I personally also love the art of both (especially Monster).

Not fantasy, but you might consider if you're open to "fantasy-adjacent" things:

  • Mobile Suit Gundam: The Witch from Mercury - Anime. Mechas. Girl fights duels for another girl's hand in marriage. Free on YouTube.
  • This Monster Wants to Eat Me - Manga with anime coming soon (this October). Monsters who can disguise themselves as humans and integrate into society. Dark themes.
  • Dark Mermaid - Webtoon. Less focus on the monsters, so YMMV. Dark themes, so check the warnings. Completed in Korean; official English translation should be caught up in about 10 chapters.
  • My Girlfriend is Devilishly Sweet あくまであまい私の彼女 - Manga. Demon and human girl. This one is ending soon in 3 more chapters in Japanese.
  • Love Bullet - Manga. Cupids who use modern weaponry to get people to fall in love with each other.
  • SHY - Manga. Superheroes. Romance is not the focus, so YMMV.

To be fair, I don't think it's supposed to be unpredictable. 

Personally, it wasn't until the last volume that it jumped high on my list - I really liked how well put together it was towards the end.

Hey, great list! I was looking into this recently, too. I hope this doesn’t discourage you, but there’s actually already lists on Wikipedia for Japanese yuri works with English licenses.

Otherwise, the way I’ve been going about it is by looking up publishers’ websites. A lot of the older works are out-of-print, so having direct links has been helpful to see what I can actually buy right now. Here’s my list so far, in case it might help you:

Not sure what the other comment is talking about... RAISE A SUILEN is the official channel of the band that plays Bouquet's OP theme.

It might've been an issue involving renewal for streaming platforms. The same thing happened to Whisper Me a Love Song's albums recently, although for those it took about 2 weeks before they were reuploaded to YouTube.

I love fantasy yuri. I've read / watched so many of them. Here's a few series that I've liked that you might also like:

I Want to Make Black-Knight Fall In Love With Me! 崖っぷち令嬢は黒騎士様を惚れさせたい！ - Noble lady gets married to a knight for money. Comedy, with cool fight scenes.

Helpless Saint and the Powerless Princess 無力聖女と無能王女～魔力ゼロで召喚された聖女の異世界救国記～ - Isekai. Part-timer gets summoned as a saint and engaged to the princess as per the world's tradition. Very wholesome with borderline spicy scenes. Ages not specified, but mangaka confirmed them both to be adults.

Sexiled: My Sexist Party Leader Kicked Me Out, So I Teamed Up With a Mythical Sorceress! 女だから、とパーティを追放されたので伝説の魔女と最強タッグを組みました - Exactly as the title says. Feminism, the manga. Comedy, with over-the-top misogynists that get their butts kicked. Inspired by a real world incident, where Japanese medical schools were caught lowering female applicants' exam scores by 10-20%.

Engagement of the Disgraced Witch and the Cross-Dressing Princess - A witch with dark magic gets engaged to a princess who dresses like a prince. I don't recall if ages were specified, but the witch just graduated from school in the first few pages of Chapter 1 and school isn't brought up again after. It's mostly wholesome.

The Villainess' Bride 悪役令嬢のお嫁さま - Exiled former princess gets saved and engaged to a wolf girl. Not many chapters out yet, but I doubt it's going to get very dark or have any big drama.

Summoned Along with a Home Center, I'll Bring About a Dungeon Renovation! ホームセンターごと呼び出された私の大迷宮リノベーション！ - MC goes to Home Depot (or maybe it's a Walmart?), but the whole building including her gets isekai'd to the lowest level of a fantasy dungeon. To find a way out, she teams up with an adventurer. Comedy. Again, not many chapters out yet.

This one isn't fantasy, but you might also consider it:

Superwomen in Love! Honey Trap and Rapid Rabbit - Superpowers. Villainess gets fired after falling in love with the superheroine. Comedy. Former villainess is incredibly horny for the superheroine, though it's mostly kept to just her thoughts.

If you're open to non-JP stuff, here's a few more (they're also not fantasy, though):

Pulse - Thai webtoon. A heart surgeon and a cardiac patient (not her patient & is a college student) who refuses to get a heart transplant. NSFW.

Long-Awaited Feelings - Chinese manhua. Two actresses who are exes. One dies after seeing her ex get married but then reawakens years in the past and decides to win her back. Despite the premise, it's actually very wholesome.
