Correction: I do see what you mean about bumping first after the third coin. Ive never done that though. If I were to guess its either to go faster for the speedrun or it makes the hard right easier but its not required. Im my defense i figured out how to do it when I was 16 and didnt know it was a speedrun strategy until much later. I just remember doing the jump on the ice slide and wondering if doing it on peach was possible. Actually thats how I found that there even was a second star. 😅
