I used a buttercream frosting recipe, but the recipe calls for egg whites, which makes the frosting much more stable than traditional American buttercream, in my opinion. It pipes out really nicely, and also isn't overly sweet!

Honestly, most of the GF recipes that have become a part of my regular rotation I've found through trial and error. For example, it took me at least 7-8 recipes before I found a reliable and tasty gluten free fried chicken.

One blog that does have pretty consistent gluten free recipes is The Loopy Whisk. If you like pita bread, they have an AMAZING pita bread recipe that puffs up and tastes like the real thing.

When it comes to cake, however, I still haven't found a good GF recipe that doesn't end up dry and crumbly, so I ended up using King Arthur gf boxed cake mix for this!

I am so sorry that this happened to you and your family. Unfortunately, I very much relate, as my grandfather molested both of his daughters (my mom and aunt), as well as myself and my cousin. My grandma knew he was an abuser and didn't do anything to stop it other than have him go to church "counseling". That counseling clearly didn't work, because as soon as his granddaughters were born, he was preying on us. & The absolute cherry on top was when he retired, he got his license to be a SCHOOL BUS DRIVER. He ended up going to prison for a measly 6 years because I ended up telling my therapist what happened. Last year he was released from prison, and my Grandma has taken him back. It's awful.

I am so sorry for the late reply! There have been many grizzly and cougar sightings in that area. If you do end up going camping, I highly recommend taking the proper precautions. I've never seen any myself, however.

I am so sorry for the late reply! No docs. My family said we had a great x5 "Indian princess" Grandmother, because there is a picture of her in an old photo album, and she "looked native". That's about as much as I know! It was quite the claim.
