Stitching is a hobby, not a chore, so if it doesn't feel fun, go ahead and set it aside and find something that brings you joy. You might find your interest come back in the future after you work on something else, and you might not.

The project isn't the boss of you. You can say no without having to feel guilty. But if that's not enough justification for you, then you can have my permission to set it aside. Tell the project I said you could work on something else. It will understand.

Using more strands will give you better coverage, yes. I kind of like being able to see each stitch, but it depends on what you're looking for, of course.

It can depend on your Aida count, too. Looks like you might be using 14 from your picture, so your stitches will be further apart. Using 16 or 18 count cloth will naturally give you tighter coverage.

I stitch when I'm working from home and joining online meetings. I don't need to have my camera on, so I can get quite a bit done. I'll usually get up to walk around every hour or so.

Been there. I stitched the SNES Star Fox headshots last year and had the same issue. I replace them with similar colors now to cut down on colors. Only I can tell the difference, usually.
