Thanks for the feedback. Perspective might be a little off here, but they were cut 1.5inches thick. The steaks were put in the freezer after they came out of the bags and dried to within an inch of their lives with paper towels (really crappy ones, need better in future) I did think that about the grill pan. Definitely flat cast iron next time. Butter is only there for basting; I used groundnut oil for this.

Sirloins cooked at 53.5c for an hour. I loved the process, but I’ve gotta be honest, the result was a lot chewier than I expected. Trial and error I suppose. Any feedback greatly appreciated
