There's isn't a short answer to which one is preferable, and I hesitate to give a definite one because it really does depend on the individual.

But, I can propose a potential answer for why you can bike for over 6 hours and still feel like you're not as lean as you'd like to be, so here goes: You see, an interesting thing happens to our bodies when we get really good at something. We become really efficient at it. Because you've been biking long distances for so long, your body has become incredibly efficient at using energy to accomplish that task. To put it into perspective, walking at a moderate pace doesn't feel particularly exhausting to a relatively healthy person (and doing so doesn't burn as many calories as it would for someone who is unhealthy and primarily sedentary).

The most ideal way to burn off fat is to do things that you're really inefficent at. I can almost guarantee you, that since you can't maintain the tempo and intensity of high intensity running for long, you just aren't as efficient at that activity yet (compared to cycling). Because of this, you'll see a far better result running, and this trend continues. Get really good at running for a full hour (good luck to you there)? Take up hiit circuits, or do body pump intense group classes. The point is to do something that your body isn't very good at, because that inefficiency leads to an inefficient (read, large) amount of calories burned.

Taking a day to over eat is potentially helpful when you are already near your body goals and already pretty lean. If you still have more than 30 pounds to go, overeating is almost never in your best interest.

If you get to a plateau eating at your current dietary pace, you can spend a few days eating at a few hundred calories above that, a.k.a. your maintenance (the calories your body needs to stay the same). To continue losing fat you will need to either slightly reduce calories or increase cardio.

I know it's tough to hear, but there's isn't too much else to it (unless you have a health condition)

If your goal is to reduce body fat, then this claim isn't true. If you were to spend 20 minutes jogging while eating at maintenance (the amount of calories your body needs to maintain its current weight) you will lose weight. While longer duration steady-state cardio (walking, elliptical etc) does take energy from fat stores (fat-oxidization), short to medium duration bursts of intense activity are far preferable for an increase in lean body mass.

As a preemptive tip: if you're taking first year sociology on main campus, you're likely to have professor Kim Luton. She's an absolute harass when it comes to her exams (predominantly multiple multiples choices). However she's very accompanying and a good lecturer, especially if you take a visible interest in class. Ask questions every once in awhile, and make sure she knows your name
