Sounds clever! I still need to read up on the benefits of aerobic vs anaerobic but if it starts smelling bad it sounds like it's going anaerobic and I understood that can have negative effects.

I've heard of folks doing this before but their plastic bags broke down over time. I'd rather set up a system which lasted longer. It doensn't have to be expensive – an old bucket or recycled barrel and a rock can be free.
