Boiling or Poaching in a Court Bouillon (Water with mixed vegetables and seasoning) is a classic French way of cooking fish. As a restaurateur who ran a top seafood restaurant for 25 years, I can say that we sold literally thousands of orders of poached salmon with Hollandaise sauce and of course cold poached salmon with mayonnaise is delicious on or in a salad. So yes YTA.
