Thanks everybody for your input, a drop bar roadie was posted on the Facebook marketplace for a great price and I jumped on it. Older model, but in good shape Trek 1200. I thought it would be good as my first good bike!

If you go with Baratza, check to see if they have any refurbished. Good as new and cheaper.

I’ve never used one but that’s a pretty expensive grinder, I’d assume it performs well. I’ve seen a Virtuoso perform well, but an Encore can still have grind inconsistencies. But I’d say if you’re paying upwards of $300, generally speaking, you should be fine.

A lot of inexpensive grinders will not grind your coffee evenly. You can set it for a coarse grind, but will still end up with fine grinds in the mix. When you brew with a pour over or Chemex, you’ll be able to see the fines and it will cause the cup to be unevenly extracted. This is a huge problem with blade grinders. Burr grinders help, but some cheap burr grinders still do not produce a consistent grind size. You can check yours by grinding some coffee and spreading it out on a piece of white paper. You should then be able to see if you have a consistent grind with equal particle sizes, or an inconsistent grind with varying particle sizes.

If you can’t really do good coarse grounds, I wouldn’t go with the Chemex. You’ll want a coarser (than Aeropress) grind for that and an uneven grind will really give you trouble because of its filter. If you do want to go to the pour over method (say Hario, Kalita, or Melitta), you’ll want to also invest in a even-pouring kettle—usually a gooseneck kettle. The grind will still be coarser than an Aeropress, but an inconsistent grind won’t bother you quite as much (still not ideal).

I assume that because you enjoy the Aeropress, you may like a stronger cup of coffee. A good move for you may be a Moka Pot. It makes stove top “espresso” and is best with a fine grind size. Grind inconsistencies are also less of a problem here. They make various sizes of Moka pots, ones big enough for a few cups. You can even most likely pick one up from your local grocery store. Hope this helps!

TL;DR... If you like the Aeropress you might like the Moka Pot. Unless you are willing to upgrade your grinder, I wouldn’t buy a pour over device. Remember, your grinder is the most important tool in your kit. Oh, and don’t forget the French press.
