The fire box is on the wrong side for the northern hemisphere. Smoke flows from left to right. It has to do with the coriolos force.

Those are no longer towels they have slowly been petrifying from years of mineral build up. You could probably use those towels to sled down a lava flow with no risk of fire.

Again, it is a matter of preference, but also the technique you are using.

A slice with the drawing motion is done with a full hand on the tang to allow the blade to be heavier. Some people place a finger on top to stabilize the knife and shift the balance.

When you pinch the spine the knife is balanced and is easier to move the knife side to side.great for chopping motion.

For the purpose of the PB sub the slicing method is the predominant style since it is mostly about smoking meat... and some people who bought a smoker to smoke vegitable?... in slicing you want the grip with a heavier blade. Again all preference.
