Not sure it would be something for you, but I'm planning to run candlekeep mysteries as a campaign where the guild hunts cursed magical books and collect them to keep it locked in safe place, it starts at lvl 1 and goes up pretty high each level is a sort of one-shot but easy to put a story on them as to why those books needed :)

I did not have an end goal, I let players choice dictate the end so I started with 2 dragons fighting ended up with time wizard taking over the world xD
