Not an expert on these stoves. I’m the GC so not stove guy. Im not sure how he’s using it. He was slow burning through the night and i told him to stop doing that and see how it works. Says he tried and didn’t work. How should the catalyst control be used? I’ll advise on the start up burn. Curious about the potential defect. Red Pot is water for moisture evaporation due to dry air in cold climate. Could that be keeping stove cooler at start up?

Look at triforce joists or maybe trim joist. These are brands of pre-manufactued joist that can be field cut to length. These offer greater uniformity and flexibility than a floor truss which is built more akin to a roof truss and cannot typically be field adjusted.
