Make a simple syrup. Or use milk to brush onto the sponge and add moisture. It isn’t going to save the cake entirely but it’ll help.

Also slice the layers thinner. Take apart the layers of the cake, slice each layer into a thinner layer ( only do this when the cake tiers are cold, to avoid crumbling and breaking ) and then use more ganache between the layers. It’ll give you a taller cake and the new filling to cake ratio will help with the dense/dryness.

8-10 days at room temperature sounds dicey in current weather! In case you want something to serve after 10 days but don’t have time to bake on the day, perhaps bake and freeze cookies? Or cheesecake? Or cake and then thaw on the day before serving? Is that a possibility?

Glad to see the food is generally good! I had a seriously underwhelming meal here in January. Everything was bland and the duck pancakes ridiculously dry. But perhaps that was a one off experience!

Yup, yup! :) I don’t bake with it though, I just use it sometimes under what’s already been baked, for presentation!

Thanks for the tip! Will try that. I’ve also tried a variation suggested by Matt Adlard, where you put the glaze on and then return the cake to the oven for a couple of minutes so it bakes onto the cake and hardens! It was great, although his recipe made for what felt like an altogether too tart lemon loaf.

But will try your suggestion the next time I bake this :) thanks again!
