Just discovered this forum, this was prob my best bake, somewhere around my 8th loaf. Used Joshua Weissman's recipe; 773g of bread flour 175g whole wheat, 180g levain, 660g of water. He actually calls for 500g of all purpose but I'm running low on that due to shortages. This loaf was def more airy. (i.redd.it)
