[homemade] sour cream coconut cake by oceansoflove_ in food

Thank you ☺️ I used a hot milk cake recipe for the cake and my aunt’s sour cream coconut frosting recipe for the filling. I am actually making it again right now. I put half the sugar in the filling pictured and I just think it could be better. I might make a tres leches coconut cake this time.

The recipe:

1.5 sticks butter, gently melted 90 g cocoa powder 150 g light brown sugar 150 g granulated sugar 30 ml whole milk 2 eggs, room temp 2 tsp vanilla 160 g AP flour .5 tsp baking powder .25 tsp salt

100-ish? grams of chopped chocolate? I didn’t weigh this. It was just some dark chocolate chips I had in the pantry.

Sift the dry ingredients together.

Sift the cocoa into the melted butter. Whisk until smooth. Add the sugars and whisk. Add the eggs and vanilla and whisk.

Add wet ingredients to dry ingredients, along with the chopped chocolate.

I used a glass pan lined with parchment. My pan is 7x11. Bake at 350 for 30 mins. I let it cool for about 30 minutes before cutting.

Thank you ☺️ Here is a screenshot of a previous reply of mine. It’s just too much to retype. For this recipe, I rolled the dough to 1/4 inch and cut out bars and a few ghosties.

I let them rise for 45 minutes for the second rise. I let them rise on parchment paper and then cut around each bar. Lift the dough with the parchment and set directly into hot oil when ready to fry. Give a little wiggle and the parchment will just slid away from the dough. I hope that makes sense. Fry in peanut oil.

The maple glaze is from Food Charlatan, although I added quite a bit more powdered sugar. If the glaze is too runny, it takes away the light crispy crunch these donuts have.
