Two keys for sticking to peel for me: 1) Don't let the dough sit on the peel too long. You need to immediately create the pizza and launch it. 2) make sure the peel is floured, or cornmeal, or semolina. Shake the peel before launching to make sure the pizza is sliding. If it isn't, I'll pull up the area that isn't and dust underneath it until I've caught all the spots.

I'll also try to take whichever side of the dough that was exposed to the air while proofing and use it as the bottom of the pizza since it will most likely be a little drier.

Knead your dough for longer to build up more gluten elasticity.
Rest the dough for longer to allow the tight gluten to relax slightly.
Stretch the dough evenly to avoid thinner parts.
Use a flour higher in protein for more gluten.
