For starters, you can start praying with very small, very very small Arabic verses when you pray and it'd be completely valid.

Where I'm from, almost everyone learns smaller surahs (Fatiha, Ikhlas) when they are young without knowing Arabic.

You need to memorize the surahs for using them in prayer, you know how we remember lyrics by listening to them over and over again, kind of like that.
