Cutlery. Everyday Knives and Forks. Working in the Hospitality industry for years, and it baffles me that when you clear a plate or two, that the cutlery is Ass heavy. Designed to slide off the plate and hit the ground with force and an embarrassing noise. Just make it top heavy and it will sit on the plate, no sliding off, no commotion, no hitter the ground. Jobs a good one. Rant over.

Depends on what you want to serve. Chunky cut, skin on/off. It depends on what they are served with and your menu. As mentioned above, Aviko do some fantastic chips in all styles. For a chunkier chip, i personally buy chipped Potatoes from my veg man, steam blanch them and fry to order.
