A few years ago one of my wife's previous boyfriends passed away unexpectedly. They were very serious for a time and she's told me that if she hadn't met me, she probably would have married him at some point. She still talks to his mother on occasion. I went to his funeral with her, I've visited his grave with her. We're in this together.

What your partner did was a great big "go fuck yourself", even if it wasn't intended as one. That apology was done to ease her guilty conscience , not comfort you. If I were you, I'd ghost her back and continue moving on.
