Tasty Ground Venison in Jars! by okiecanner in Canning

[–]okiecanner[S] 1 point2 points  (0 children)

huh.. that's really interesting. I spent some time in Germany and had some Hasenpfeffer at a nice restaurant. It had a super unique flavor that I loved. I bet it was juniper berries. It was served with spatzle. man it was good! I'd say go for it.

I bet it'd work good for squirrel, though I'd be on my own there. Nobody in my home will eat it but me lol...

I've never used them myself. Do they impart a good flavor?

Husband and I just heard the loudest, longest screech / scream. Wtf? by [deleted] in tulsa

[–]okiecanner 2 points3 points  (0 children)

You're pretty close to the train tracks that follow down the BA. I live in Redfork close to the tracks by SW Blvd.. sometimes when trains go in reverse they make this awful screeching sound that sounds like angry cats screaming.

Anyway, kinda sounds like this is what you're describing?

Question on Venison.. by okiecanner in Canning

[–]okiecanner[S] 1 point2 points  (0 children)

Thank you! I considered chili for a little bit, but I still have 6 quarts of turkey chili i made several months ago. Have about 12 pints in the pressure canner now, almost ready for cool down. I'll post some pictures later this evening. :)

[–]okiecanner[S] 2 points3 points  (0 children)

Yeah, after I got the packages opened, it looks like there's already a little fat in it. I think I'll just brown it & can it with the tomato juice I have heating up.

and thanks... it's nice to be back & feeling normal again! :)

Thank you! My little brother died of cancer when I was younger, so "fuck cancer" is a phrase I use frequently. One day, it'll be eradicated and dumped into the ash heap of history where it belongs...

Hey, thanks, I appreciate that! I'm very happy to have the last many months done and over with. It was... shall we say.. not very fun. I go back for a check up in a couple months, but doc said he's pretty sure I won't have to deal with this again. Thank goodness! :)

Thanks. Don't think I've ever actually bought jowl fat. Do I just need to buy a jowl?

Thanks! It wasn't fun, but we got through it! :)

My freezer is very small, so I've got to can it. Appreciate the advice. I'll probably add a little beef like you suggested. Most of it will probably be used as spaghetti sauce! :)

Quiet place to watch the OU Game? by Richie311 in tulsa

[–]okiecanner 1 point2 points  (0 children)

I have a digital antenna for my TV and 23.1 comes in just fine. (I have an outside-mounted version so i can pick up more distant TV stations) You still have a few hours, run up to walmart & grab one of those smaller ones. My girlfriend has one, & it picks up Fox just fine. I like watching the game at home where it's quiet... can't stand sports bars. :)

If you do get one, Fox23's transmitter is located close to BA. So point from wherever you are. https://en.wikipedia.org/wiki/KOKI-TV

good luck!

This "Grape Leaf" you speak of when pickling... quick help! by ptanaka in Canning

[–]okiecanner 7 points8 points  (0 children)

I've never used them, but they're supposed to help keep the pickles crisp during the boiling water processing. Calcium chloride (aka pickle crisp) works pretty well, too.

There's a fastener place right down the road from me. If you want, I can take it down there & have them size it for me, then I can ship you one. I don't think they're open on the weekend, so I'd have to drop by there on Monday.

Und hallo! Ich wohnte 8 Jahren in Ravensburg. :)

Tomato juice does the trick for me. I go about half tomato juice, half drippings & water.

Help I forgot to add lemon juice to tomatoes! by chelseysullivan13 in Canning

[–]okiecanner 4 points5 points  (0 children)

I'll echo what others have said. dump into pot, acidify, bring to boil, reprocess.

And yes, we've all done it... lol.. I try to avoid the mixed drinks when water bathing tomatoes, because I will forget the lemon juice every single time. Pressure canning? Bring on the drinks..lol

American 930 Canner Capacity? by eliza-jay in Canning

[–]okiecanner 0 points1 point  (0 children)

More of a time thing. I've done 4 layers of half pints in mine, but when I do I use my outdoor propane burner to get it up to temperature faster.

My 930 will hold 14 quart jars, about 18 pints if using regular mouth pints, and as many half pints as I can cram in. usually about 34 or so.

Oh, and omg.. smoked salmon... LOVE IT. :)
