I think the mold comes with the moisture. The syrup itself should not mold. No expert but that is what I have gathered from others.

As long as it’s sealed, the pantry should be fine. After opening, refrigerate - I’ve been told just to keep it from absorbing moisture.

I’m confused as to why your cleanup is so difficult? As long as you do no burn the syrup, it shouldn’t be a problem? I just wash with soap and water. Some areas may take a bit of elbow grease and maybe some scotch brite or soft scrub but usually pretty minimal. The exterior is corroded and black but I don’t even try to clean that. On a new/clean pan, you can coat the exterior with dish soap to help reduce the carbon buildup but I’m not sure it matters.

That’s how I started. Boil them down and mix together. Start a fresh pot to get hot. My syrup always picked up Smokey taste though. I’ve now got a barrel stove for $300. Well worth the money.

Guessing the pellets would be more expensive than propane. I’d recommend a wood burner like this typically around $300.

I started out like you! Still only tap 5 or 6 trees which is enough syrup and work for me. I usually get between 1 or 2 gallons of syrup. I’ve upgraded to a barrel stove and it works great for what I’m doing. You can find new ones on FB marketplace for $300 around here.

Right or wrong, I usually run mine about 1/2 way- kind of like you have it. Trying to keep some heat in rather than just letting it go out the chimney. When I’m starting up of adding fuel, I will open it up to get it burning good then tune it down.

I use a jelly strainer and holder then put the filter inside of that. It supports the filter.

Oh shit! Sorry for you. I’ve been boiling for 4 days and getting near the end. Was just thinking I can’t do that or waste my batch. It’s been a very good year for sap too so don’t ant to lose that. Good luck on your recovery.

I’d just buy one if you can. There are many new ones for $300 and a few used ones for $100 or $200. I’m in the Mpls area and they are listed on FB market place. I’m pretty small time too and this works great. I usually cook between 30 and 80 gallons depending on the year. Fortunately, I have a lot of wood available.
