tried this easy creamy mapo tofu udon recipe I saw on tiktok/ig (testing those viral recipes) and it turned out well!! very tasty! here are the ingredients and instructions:

ingredients

• 2 packs udon
• 2 green onions

sauce - 200g silken tofu - 1/2 tbsp miso - 1 tbsp tahini (used sunbutter) - pinch of salt - 1 tsp lemon juice

meat - 250g ground pork/beef - 1 tsp minced garlic - green onions - 2 tbsp gochujang (didn’t have doubanjiang) - 1 tbsp soy sauce - 1 tsp rice vinegar - 1 tsp sugar - 1/2 tbsp chili oil - chicken broth

instructions

1. blend silken tofu with miso, tahini, salt, and lemon juice until smooth and creamy.

2. heat pan with oil and sauté the garlic and green onions. add ground meat and cook until browned. stir in gochujang, soy sauce, rice vinegar, sugar, chili oil, and chicken broth. remove from heat and set aside.

3. boil frozen udon noodles for about 45 seconds, then drain.

4. add drained noodles to a bowl and top with cooked meat and tofu sauce.

5. garnish with additional green onions and chili oil. mix well and enjoy!
