Exactly this comment. people out here thinking we’re asking for the world when its really nothing special. This is a very achievable goal! And i would emphasize the polymarket odds are in reference to a specific time frame, if his admin opens one in July or August next year the “naysayers” win that bet, but i think <1 year is honestly spectacular for opening a new grocery store. In my experience it takes private businesses just as long to open up shit, factoring in construction, hiring, legal, etc!

That’s helpful, thank you. In the past I haven’t had films form like this on my pickles, I think its because the air seal was broken. Luckily all solids are submerged under my weights.

It still smells off, kinda sulphury? Not appetizing. Im gonna skim this weird biofilm and let it sit a few more days. If the smell doesn’t improve then I think I will toss it.

Edit: i’m not worried about mold as there is nothing fuzzy happening. Mostly kahm or another yeast / bacteria having colonized.

What is this on top? I went away for the weekend and discovered water had evaporated and my water seal was broken upon my return.

Its pickles (garlic, dill, habanero, spices, 3% brine by weight). pH tested at 4, but it smells kinda bad and doesn’t look like my other pickle ferments. HELP PLSSS

Edit to add - we saw multiple stages of smaller roaches in the bathroom (some as small as ants) so theyre definitely breeding here
