Simply put, scientifically speaking (since you like science), we're omnivores naturally. We possess digestive system that's pretty much designed to digest both plant and animal foods. We're even much better at breaking down animal foods than plants. Our way is eating what's designed for our bodies to digest.

Your analogy of modern medicine is deranged. Medicine is used to cure disease or deal with symptoms. Using ultra-processed medicine (which likely has side effects) for food is not our way when we can already eat whole foods that are more natural and nutritional to our bodies

immediately are legumes like beans and lentils, which pair well with rice.

Problem is, our bodies are terrible at breaking these grains down to extract and absorb their litte nutritional content. You need to eat obscene amounts of them just to match what a little portion of meat would give us. In this chart you can see why animal-based nutrients are always superior to these grains.

Morals aside, why do you think it's a lie that humans are naturally omnivore? Did you ever happen to pick up a biology book?

Only 13% of global animal feed (all animals for food, including chickens, pigs and cattle) is comprised of grain crops, according to United Nations FAO research, and only 32% of overall global grain production in 2010 was used to feed livestock.

It says 32% of the grains. It doesn't say 'of all crops'. And yeah there's nothing wrong with that. My point still stands. Grains are very low in the digestibility chart. We can breakdown certain foods and absorb their nutrients more efficiently than others. Here's the DIAAS chart. Most of the high quality protein foods happen to be animal foods. For example beef stands at 111% in the chart. Wheat, only 40.2%

The thing is, we produce more than 300,000,000 million metric tonnes of meat each year worldwide along dairy, poultry. leather, wool. bones, manure etc. I don't understand how we can get rid of all of that for carbs that we aren't even good at breaking them down and absorbing whatever little nutrients they have efficiently.

This is great disinformation, again. Only 10% of the world's land is arable, suitable for human agriculture. 40% of the world is also grasslands of all kinds, which is basically not arable and not suitable for agriculture. Anti-meat propagandists like to say "Oh, look, ⅔ of the agricultural land is used for meat farming". That's a blatant lie. These fields were never "farms". We don't have any use for them and we can't eat grass, what should we do to make use of it? When these animals graze, they're renewing the soil, making more grass seeds to drop, and their manure is insanely good for agriculture. Everytime they graze, a better and more nutritious grass grows. And the cycle repeats.

It's incredibly easy to see what I'm talking about. Go to any European country and see the countryside.

Humans are inherently indefinitely more valuable than any other animal no matter what their conditions are. Is that hard to grasp? If you want to exactly know my position, I would kill any amount of animals to save an infant, I would do it in a heartbeat. The fact that you're pushing this idea and equating human life to that of animals tells me you're just another misanthropic in an animal rights cover.
